This sounds delish! I just made a butternut squash apple soup, which was like warm grown-up baby food. Really it was baby food, eaten by grown-ups. It was yummy and a giant PITA to make. There were expletives spewed in the process of peeling and dicing the Butternut squash.

I have discovered instant pot soups. My primary go to is beef stew. Recently pulled up a chicken & rice soup. The other I make often is a low carb( ish ) minestrone. But yeah, get some broth, a protein and throw veggies you like in: congrats, tasty eats!
Here are a bunch of my favorites, but I also make what I call a Scottish Hot Pot...balls of sausage dropped into a vegetable soup, with barley. Delicious!

From my notes: Instant pot: cook 20 mins for brown/wild rice. Try 5 mins for white rice.

For frozen chicken, defrost before adding at the end. Use the saute feature if it’s still cold

Actually, that can be a lovely soup as long as you use apples with a bit of bite, but not sour. Too sweet and it gets cloying.
